- 4 medjool dates (approx. 60g pitted)
- 50g almonds
- 25g rolled oats
- 1 medium carrot, grated
- 2 tbsp flaxseed, milled
- 1.5tsp ground cinnamon
- 1tsp vanilla extract
- 15g coconut desiccated
- ½ - 1tsp grated fresh ginger if you like zing
- Coating: Desiccated coconut (optional)
- Place all ingredients into your food processor and blitz until everything is blended.
- Form 12 balls with blended mixture.
- Roll balls into desiccated coconut.
- Pop in the fridge to firm up for at least 2hours. Enjoy.
